The new Tuscany:
An Umbrian Adventure

Umbria's culinary and scenic delights are becoming as well known as those of neighbouring Tuscany. An adventurous way to discover the region is by bicycle.

...As the heat of the day accumulates, so does a sense of relief that today's destination does not rest at the top of a hill. The small town of Bevagna sits on a flat plain, clinging snugly to the banks of the diminutive River Teverone and surrounded by vineyards and sunflowers fields. Each late afternoon the population assembles in the main street and square for the traditional stroll and aperitif, Bevagna's most rewarding dining option is the Redibis, housed in the lower section of the remains of Roman amphitheatre. The amphitheatre, a big attraction along the busy Via Flaminia two centuries ago, seated 8.000 people; the restaurant is a little more intimate and serves succulent shank of pork in red wine with thyme and a mousse of a broad beans...
