As in the Noma restaurant, also in the Redibis we eat on the wood

Inside the major ambulatory of the first century we have chosen tables and chairs designed by designer Irene Birindelli and by architect Roberto Fernandez Lopez.
The distinguished journalist Paul Marks says that an area so important and laden with history, turned into a local French that "looks like a sixteenth in Versailles", he would become a local so heavy as to impair digestion.
 


More great restaurants like Noma in Copenhagen, just awarded as the number one in the world, the Calandre at Padua and Momofuku Ssam Bar in New York, chose to remove the tablecloth and everything that smacks of charge and pompous ostentation.
In September 2005 we opened Redibis with the same spirit which we have completed our hystorical residence that is with the simplicity and essence of the Umbrian people.
Our tables were made following the tradition of our people.
After drying for an entire winter and spring, the tables of walnut or Junglans, this is indeed the most noble timber used for centuries in Umbria, our carpenter cabinetmaker Fabio Franceschini made our dining tables just as you did from three hundred to the end of the nineteenth century.
Our cuisine is inspired and developed on the old recipes of home and friends of our family - which boasts 1,960 recipes range from the mid-nineteenth century to the thirties - is well proposal on small mats in natural linen that allows to discover the plan walnut framed slats according to the technique of the ancient Umbrian carpenters.
